Sourdough Discard Banana Bread
Sourdough has become so popular lately, which is a wonderful thing! But one thing that seems to keep coming up is what to do with the discard when life gets busy. I get it! That's why I'm sharing our sourdough discard banana bread so it doesn't have to go to waste!

- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1/2 cup melted butter
- 1/2 cup packed brown sugar
- 2 large eggs
- 3/4 cup sourdough discard
- 3 ripe medium-size bananas peeled, mashed
- 1 teaspoon vanilla extract
- 1 cup chocolate chips optional
Preheat oven to 350 degrees and grease a loaf pan.
In a medium sized bowl, combine flour, baking soda and salt. Set aside.
In a second mixing bowl, beat melted butter and brown sugar until combined. Add eggs, sourdough discard, mashed bananas and vanilla. Mix well.
Add in the flour mixture and mix until incorporated. Fold in chocolate chips.
Pour into prepared loaf pan and bake for 50-55 minutes or until toothpick inserted into the center comes out clean and golden in color.
