Baked Porcupine Meatballs

These baked porcupine meatballs are made with simple ingredients and will quickly become a family favorite.

Ingredients
  

  • 2 lbs Ground beef
  • 1 cup Long grain rice
  • 2 Eggs
  • 1 medium Onion chopped
  • 4 cloves Garlic minced
  • 1 tsp Italian seasoning
  • 1 tsp Sea Salt
  • dash Pepper
  • 30 oz Tomato sauce
  • 1 1/2 cups Broth chicken or vegetable
  • 1 Tbsp Worcestershire sauce
  • 1 tsp Garlic powder
  • 1 tsp Brown sugar packed

Instructions
 

  • First, preheat the oven to 350 degrees F.
  • In a large bowl, add in ground beef, rice, eggs, onion, garlic, italian seasoning and salt and pepper. Mix well (I choose to use my hands to mix ingredients).
  • Once the meat mixture is mixed well, form into 1 1/2" meatballs. Place into a 9x13 baking dish. This one is my favorite baking dish.
  • In a separate bowl, combine tomato sauce, broth, Worcestershire sauce, garlic powder and brown sugar. Mix well. Pour over the meatballs in the baking dish.
  • Cover tightly with tin foil and bake for 1 hour. After an hour, check the rice to make sure it is fully cooked. If not, place it back into the oven for 10-15 minutes.
