Baked Porcupine Meatballs
These baked porcupine meatballs are made with simple ingredients and will quickly become a family favorite.

You’ll be amazed how easy these baked porcupine meatballs come together. Throw the ingredients in a bowl, form the meatballs and stick them in the oven. Then, you’ll have a delicious staple!
I have one child in my family that gets excited that I am making meatballs any time I have ground beef out of the freezer to thaw.
Baked porcupine meatballs look like little porcupines in a pan and pair well with baked potatoes and a veggie. This recipe is so good and so easy, it will be one that you come back to over and over.
Ingredients for Baked Porcupine Meatballs
- Ground beef
- Long grain rice
- Eggs
- Onion
- Garlic
- Italian seasoning
- Sea Salt
- Pepper
- Tomato sauce
- Broth
- Worcestershire sauce
- Garlic powder
- Brown sugar
Make your Porcupine Meatballs
First, preheat the oven to 350 degrees F.
In a large bowl, add in ground beef, rice, eggs, onion, garlic, italian seasoning and salt and pepper. Mix well (I choose to use my hands to mix ingredients).

Once the meat mixture is mixed well, form into 1 1/2″ meatballs. Place into a 9×13 baking dish. This one is my favorite baking dish.
In a separate bowl, combine tomato sauce, broth, Worcestershire sauce, garlic powder and brown sugar. Mix well. Pour over the meatballs in the baking dish.

Cover tightly with tin foil and bake for 1 hour. After an hour, check the rice to make sure it is fully cooked. If not, place it back into the oven for 10-15 minutes.

What does this recipe pair well with?
This recipe pairs well with baked potatoes or our Parmesan Crusted Potato Wedges. I also recommend serving it with a vegetable, like green beans or steamed brocolli.

- 4 cloves Garlic minced
- 1 tsp Italian seasoning

- 30 oz Tomato sauce
- 1 1/2 cups Broth chicken or vegetable
- 1 Tbsp Worcestershire sauce
- 1 tsp Garlic powder
- 1 tsp Brown sugar packed
Instructions
