Sourdough Discard Pizza Crust
This easy sourdough discard pizza crust is super easy to make and a great way to have the sourdough taste in under an hour.

Whenever my discard starts mounting up in the refrigerator, I’m on a mission to make something that uses it. I will not throw it away! I know some have no problem doing it, but I just can’t!
I like to have this option available when we decide last minute to have pizza and I don’t have all day to have a long ferment sourdough pizza crust. I use a little yeast here to speed up the process, but it still tastes like delicious sourdough.
I’ll share my long ferment sourdough crust in another post. That is the perfect recipe to use when you know 12+ hours ahead of time that you will be making pizza.
Ingredients
- Instant yeast
- Warm water
- Honey
- Sea salt
- Olive oil
- Cornmeal
- Flour (all-purpose)
- Sourdough Discard
Instructions for Sourdough Discard Pizza Crust
Preheat oven to 525 degrees F. Place pizza pan inside while preheating.
Pour warm (but not hot) water to the bowl of your stand mixer. Add in yeast and let sit for a few minutes until it looks bubbly.
Then, add in discard, honey, salt, oil, cornmeal and flour. Knead for 8-10 minutes using the dough hook.

Cover and allow to rise until doubled. This process should take about a half hour.
Once risen, divide the dough into two halves. Spread into pan to desired thickness onto a piece of parchment paper.
Remove the heated pizza pans. Place pizza crust and parchment paper onto the pan. Add sauce and cheese and desired toppings.


Bake about 10 minutes until crust is golden and cheese is melted. This may take longer (or shorter) depending on your oven.
