Scalloped Potatoes and Ham
These scalloped potatoes and ham make a perfect family meal. Any time we have extra ham that isn’t getting eaten, we use it up with this recipe.

We grow our potatoes and have had our own pork butchered, so we can easily make this meal from our stock, but it is easily made with ingredients from the grocery store as well.
What are the best potatoes to use in this recipe?
Any type of baking potato would be great for this recipe. Think russet or Idaho. We grow a lot of Yukon Gold potatoes in our garden, so we will use those many times. The taste is delicious, but they don’t hold their sliced shape as well as typical baking potatoes. While we don’t mind what our pototoes look like in our scalloped potatoes and ham, if you are making them for a fancier meal, I would suggest using baking potatoes.

- Butter
- Onion
- All-purpose flour
- Sea salt
- Pepper
- Milk
- Medium potatoes
- Ham
How to Make Scalloped Potatoes and Ham
Preheat oven to 350 degrees F. Spray or coat a 2 quart casserole dish.
Peel and slice potatoes. Some people choose not to peel the potatoes, but I prefer them peeled. Cut the ham into small pieces. Put both into the casserole dish and mix around so the ham is spread throughout the potatoes.

In a small sauce pan, melt 3 tbsp butter. Add finely chopped onion to the butter once melted. Cook until tender.

Add in flour, salt and pepper. Stir well until smooth.

Remove from heat. Add in milk and mix well. Place back on the burner and bring to a boil, stirring constantly. Boil for about a minute. The mixture will thicken.
Pour the sauce over the potatoes and ham. Cut the last tablespon of butter into small pieces and spread over the top of the scalloped potatoes and ham.

Cover and bake for 30 minutes. After 30 minutes, remove the lid and bake for an additional hour, until potatoes are tender.
Allow to cool for 5-10 minutes before serving.

Serve with a vegetable of your choice. Follow it up with Delicious Apple Crisp
