Easy Cinnamon Sourdough Muffins
These easy cinnamon sourdough muffins are a delcious treat that the entire family will love!

These muffins are the perfect way to use up any sourdough discard that you aren’t sure what to do with. They can also be made with active sourdough starter as well. They are easy to make and taste like coffee cake in simple portions.

Sometimes it can be overwhelming on how to always use up the discard or even the starter if you aren’t planning to make bread. These easy cinnamon sourdough muffins help with that and they are delicious as well!
If you’ve never made sourdough before and don’t have a starter, I will share how I made mine soon! For now, here is a good recipe for sourdough starter.
These muffins disappear in our house so fast, and they are sure to do that at yours too!
First, on to the Easy Cinnamon Sourdough Muffins
Ingredients
- Flour
- Sugar
- Brown Sugar
- Cinnamon
- Nutmeg
- Baking soda
- Sea salt
- Sourdough discard
- Butter
- Egg
- Vanilla
Crumble Ingredients
- Brown Sugar
- Sugar
- Cinnamon
Recipe Instructions
Preheat your oven to 350 degrees. Line a muffin tin with muffin papers
In a small bowl, combine the ingredients for the topping: sugar, brown sugar and cinnamon. Set aside for later.


In a large bowl, combine the wet ingredients: sourdough starter/discard, butter, egg and vanilla. Mix well (I used a hand mixer). Add in the dry ingredients: flour, sugar, brown sugar, baking soda, salt, cinnamon and nutmeg. Mix until combined.


Fill each muffin liner about two thirds full. Be careful not to fill them too full.

Add the topping evenly over each muffin.

Bake for 20 minutes or until a toothpick comes out clean from the middle of a muffin.


Serve them warm or cool. This recipe is listed as a breakfast recipe, however, you can (and should) enjoy them any time!

Muffin Ingredients
- 1 cup all purpose flour
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1 dash nutmeg
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1 cup sourdough discard or starter
- 1/3 cup butter
- 1 large egg
- 1 tsp vanilla
Instructions
- 1. Preheat oven to 350 degrees. Line a muffin tin with muffin papers (12).
- 2. In a small bowl, combine topping ingredients: sugar, brown sugar and cinnamon. Set aside for now.
- 3. In a large bowl, combine the wet ingredients: sourdough discard/starter, butter, egg and vanilla. Mix well (I used a hand mixer here).
- 4. Add in dry ingredients: flour, sugar, brown sugar, baking soda, salt, cinnamon and nutmeg. Mix until combined.
- 5. Fill each muffin cup about two thirds full, while being careful not to fill them too ful.
- 6. Sprinkle the topping on each muffin.
- 7. Bake for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- 8. Remove from oven and allow to cool before eating.
